Honey Helva from Ottoman Palace Cuisine



Helva-i Hakani

3 tablespoons white flour
2 tablespoons wheat starch
1,5 tablespoons rice flour
5 tablespoons almond flour
5 tablespoons honey
2 full tablespoons butter
2 tablespoons cream
2 glasses of milk
2-3 drops rose water

 First,mix all the flour,boil the milk different place.Put the honey into the hot milk and keep it hot.Fry the butter in another pan,close the bottom of the oven,after the butter has cooled slightly,put the mixed flour in it.Mix thoroughly and then open the bottom of the oven.Cook the mixed flour until browning.Turn down the bottom of the oven and pour the honey hot milk slowly and stir it.Close the bottom of the oven and close the lid of the pan.Leave to rest for 30 minutes.Add cream to brewed helva,stir it and serve it.You can decorate with roasted almonds.

Drowning of Marzanna


This event takes place on the first day of spring. Children usually make a doll of hay or straw and old clothes. This doll is called Marzanna. She is meant to be Miss Winter. The children take the doll to the bank of the river. Then they burn it and drown it in the river. They hope she will not return until the next year.
We burnt a few branches and some hay instead of Marzanna.

Workshop - Proziaki


You could try proziaki in Frankfurt. They are typical for Podkarpacie, the region we live in. The tradition of making them is about 150 years old. Proziaki were prepared when the bread ran out. Unfortunately, they are not popular any more.
